Buffalo Quinoa Bites

I love wing sauce!

Buffalo Quinoa Bites
1 cup vegetable broth
½ cup quinoa, uncooked (I used red quinoa)
2 eggs, beaten
2 tbsp reduced fat Bisquick
Dash garlic powder
¼ cup Frank’s hot sauce
2 tbsp grated Parmesan cheese

Preheat oven to 350F. Spray a mini muffin tin with cooking spray. Bring broth and quinoa to a boil in a medium pot. Once boiling, reduce heat and simmer (covered) for about 15 minutes, or until all the liquid is absorbed. Set aside to cool.
In a large bowl, combine eggs, Bisquick, garlic powder, hot sauce, Parmesan, and the cooked quinoa. Stir well to combine. Spoon batter into mini muffin tin. Bake for 20 minutes. Serve hot.
Yield: 18 bites. Per bite= 41 Calories; 1g Fat (27.0% calories from fat); 2g Protein; 5g Carbohydrate; trace Dietary Fiber; 21mg Cholesterol; 203mg Sodium.

Buffalo Chicken Monkey Bread

I decided to see if I could make a smaller version of a recipe I’d seen at Pillsburyc.om. —And I can!

Buffalo Chicken Monkey Bread
7.5 oz buttermilk biscuits, cut into 4ths
1 c. diced roasted chicken breast
1/3 c. shredded reduced fat cheese
1/4 c. wing sauce
1 TB fat free blue cheese dressing
Dash celery seed

Preheat oven to 350°. Spray small oven-safe bowl with cooking spray and set aside. In a medium bowl, combine all of the ingredients and toss to coat pieces with wing sauce. Pour into prepared bowl and bake 30 minutes or until biscuits are cooked through in the middle and lightly browned.
Yield: 3 servings. Per serving= 310 Calories; 9g Fat (25.4% calories from fat); 22g Protein; 35g Carbohydrate; trace Dietary Fiber; 48mg Cholesterol; 1288mg Sodium.

Buffalo Chicken Cupcakes
1 cup reduced fat Bisquick®
1/2 cup water
1 cup cooked chicken breast half, diced
4 tablespoons wing Sauce, Frank’s Red Hot
1 tablespoon fat free blue cheese salad dressing
1/2 cup sliced celery

Preheat oven to 350*. Combine Bisquick and water (add additional water 1 tablespoon at a time if necessary. This will be a thick, sticky dough.) Place dough evenly in 6 muffin cups. Combine chicken, wing sauce, blue cheese dressing and celery; top dough with this mixture. Press the chicken mixture into the dough a little. Bake 20 minutes or until lightly browned.
Yield: 6 servings. Per serving= 148 Calories; 4g Fat (24.0% calories from fat); 11g Protein; 16g Carbohydrate; 1g Dietary Fiber; 27mg Cholesterol; 568mg Sodium
