Honey Lime Fruit Salad

A yummy fruit salad for those cookouts this weekend.


Honey Lime Fruit Salad
1/2 c. frozen limeade, thawed
1/2 c. honey
1 TB poppy seeds
2 c. diced grapefruit
1 cantaloupe, chopped
1 honeydew melon, chopped
1 c. mandarin orange slices
6 kiwi, peeled and chopped

Combine limeade, honey and poppy seeds; set aside. In large bowl, combine all fruit. Pour honey mixture over fruit and chill until ready to serve.
Yield: 8 servings. Per serving=204 Calories; 1g Fat (4.1% calories from fat); 2g Protein; 52g Carbohydrate; 4g Dietary Fiber; 0mg Cholesterol; 14mg Sodium.

Honey Pecan Chicken

I used thighs, but you could use breasts if you prefer.

Honey-Pecan Chicken
4 boneless, skinless chicken thighs
2 TB chopped pecans
½ cup fat free chicken broth
2 T Honey
1 T Lemon Juice
1 tsp cornstarch
1/8 tsp grated orange peel
1/8 tsp salt
Dash pepper to taste

Preheat oven to 375*. Place foil on jelly roll pan. Place chicken on pan; sprinkle with salt and pepper and bake until done. Spray small saucepan with butter flavored cooking spray. Toast pecans in saucepan, 2 minutes or so. Then add chicken broth, honey, lemon juice, cornstarch, orange peel and another dash of salt and pepper; stir constantly, bringing to a boil. Simmer 4-5 minutes until mixture thickens. Pour over cooked chicken and serve immediately.
Yield: 4 servings. Per serving= 140 Calories; 5g Fat (31.2% calories from fat); 14g Protein; 11g Carbohydrate; trace Dietary Fiber; 54mg Cholesterol; 185mg Sodium.

Honey Mustard Carrots

A nice change from raw carrots.

Honey Mustard Carrots

12 oz shredded carrots

¼ c. honey

2 TB honey mustard

Dash salt

Place a half inch of water in a small sauce pan; add carrots. Bring to a boil; simmer carrots until crisp tender.  Drain and set aside. Add honey, mustard and salt to saucepan and bring to a boil. Add carrots and toss to coat.

Yield: 4 servings. Per serving= 104 Calories; 1g Fat (5.9% calories from fat); 1g Protein; 26g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 196mg Sodium.
