I made a Cheeseburger Soup this week. It needs some work. Oh! Meant to put diced, cooked bacon in here and forgot!
12 oz cooked ground beef
1 can stewed tomatoes
1 c. sliced celery
14.5 oz can fat free beef broth
2 c. shredded potatoes
1/4 c. sliced leeks
12 oz can fat free evaporated milk
1/2 c. reduced fat shredded cheese
Combine beef, tomatoes, broth, potatoes and leeks in 3 quart slow cooker. Cook on high 3 hours. Add evaporated milk and cheese and cook 1 more hour or so.
Yield: 5 servings. Per serving=356 Calories; 5g Fat (17.3% calories from fat); 21g Protein; 30g Carbohydrate; 2g Dietary Fiber; 29mg Cholesterol; 388mg Sodium.
Versatile recipe– Add items you like. Top with lettuce, tomatoes, sour cream, salsa, etc.
Taco Cornbread Casserole
1 lb 95% fat free ground beef, cooked & drained
1 TB taco seasoning
14 1/2 oz can tomatoes w/ green chilies
1/4 c. diced roasted green chilies
8.5 oz box corn bread mix
1/3 c. milk
1/3 c. water
1 TB dried chives
1/3 c. shredded reduced fat cheese
Preheat oven to 400°. Spray 9×9 pan with cooking spray. In large bowl, combine ground beef, tomatoes, green chilies, and taco seasoning; add to prepared pan. In another bowl, combine corn bread mix, milk, egg, chives and cheese; pour over beef mixture. Bake 30-40 minutes or until cornbread is lightly browned.
Yield: 6 servings. Per serving= 410 Calories; 9g Fat (31.0% calories from fat); 14g Protein; 32g Carbohydrate; 3g Dietary Fiber; 58mg Cholesterol; 837mg Sodium
They fell apart when I spooned them out of the pan, but they tasted good anyway.
Lasagna Roll Ups
4 Whole wheat lasagna noodles
8 oz ground beef
Dash garlic powder
Dash onion powder
3 oz light cream cheese
2 TB grated Parmesan cheese
1 cup chopped kale
1 tsp Italian seasoning
15 oz tomato sauce, with Italian seasoning
Start lasagna noodles in a saucepan of boiling water. Meanwhile, in medium skillet, brown ground beef. Add garlic powder and onion powder. In a medium bowl, combine cream cheese, Parmesan cheese, kale, Italian seasoning, and ground beef. Drain noodles. In each noodle, place a ¼ of the beef mixture and roll noodle around it. Place in 1.5 quart casserole dish, seam down. When rolls are in dish, top with tomato sauce.
Yield: 4 servings. Per serving= 346 Calories; 20g Fat (51.0% calories from fat); 18g Protein; 26g Carbohydrate; 4g Dietary Fiber; 62mg Cholesterol; 855mg Sodium.
