I think I would have liked this dish better with ground beef. Sure, then it’s not Chicken Enchilada…


Chicken Enchilada Zucchini Boats

4 medium zucchini

2 c. cooked, shredded chicken breasts

15 oz Enchilada sauce

1 TB chili powder

1/2 tsp paprika

2 TB diced onion

1 tsp cumin

1 1/4 c. shredded reduced fat cheddar cheese

Preheat oven to 350*. Cut zucchini in half
