Jalapeno Popper Bread

3 c. reduced fat Bisquick

3 oz light cream cheese

1 c. shredded low fat cheddar cheese

1/3 c. diced jalapenos

3 slices cooked bacon, chopped

1 c. water (or could use light beer)

Preheat oven to 350*. Spray large bread pan with cooking spray and set aside. Combine all ingredients in medium bowl. Pour into prepared pan and bake 45 minutes or until lightly browned.

Yield: 10 servings. Per serving= 206 Calories; 7g Fat (32.0% calories from fat); 7g Protein; 27g Carbohydrate; 1g Dietary Fiber; 14mg Cholesterol; 613mg Sodium.

 

Banana Rum Cake

Banana Rum Cake

3 bananas, mashed

18.25 oz yellow cake mix

1/3 c. banana rum

2 eggs

1/4 tsp baking soda

1/3 c. chopped pecans

Preheat oven to 350*. Spray Bundt pan with cooking spray. Thaw bananas in microwave. Combine bananas with cake mix, rum, eggs, baking soda and pecans. Pour into Bundt pan and bake 45 minutes or until lightly browned.

Yield: 12 servings. Per serving= 223 Calories; 7g Fat (29.0% calories from fat); 3g Protein; 35g Carbohydrate; 1g Dietary Fiber; 27mg Cholesterol; 274mg Sodium

 

Greek Tuna Salad

not bad.

Greek Tuna Salad

1 c. Smart Taste Rotini

1 pouch Mediterranean Tuna

1 can quartered artichoke hearts

1/3 c. crumbled feta

1/2 c. diced tomato

1/3 c. sliced celery

10 Greek olives, sliced

 

Cook rotini in boiling water. Meanwhile, in medium bowl, combine tuna, artichoke hearts, tomatoes, Feta, and celery. Rinse cooked pasta in cold water and add to bowl.

Yield: 3 servings.
