Slow Cooker Chicken Curry

 I thought this was great!  I like curry.

Slow Cooker Chicken Curry

2 lbs boneless, skinless chicken thighs

1 c. salsa

1/4 c. diced onion

2 TB curry powder

2 oz light cream cheese, greek

Put chicken in 2 quart slow cooker. Combine salsa, onion and curry powder and pour over chicken. Cook on low 5-6 hours. Add cream cheese and stir into sauce until well combined. Serve.

Yield: 8 servings.  Per serving= 143 Calories; 5g Fat (30.6% calories from fat); 22g Protein; 4g Carbohydrate; 1g Dietary Fiber; 89mg Cholesterol; 416mg Sodium.

Loose Meat Sandwich

These are great!

Serves 8-12 About 1/2 cup per serving Ingredients:

Loose Meat Sandwiches

3 pounds lean ground beef, uncooked
1 cup warm water
1 tablespoon dried minced onion
1 teaspoon low sodium beef base (or a bouillon cube)
1 teaspoon low sodium chicken base (or a bouillon cube)
2 tablespoons packed light brown sugar
2 tablespoons apple cider vinegar
1 tablespoon low sodium soy sauce
2 tablespoons Worcestershire sauce

8 hamburger buns
Optional toppings:  cheese, ketchup, pickles, onions, mustard

In medium saucepan add beef and cook until browned; drain. Add water, onion, beef base, chicken base, brown sugar, vinegar, soy sauce, Worcestershire sauce, and pepper.  Simmer for 15 minutes. Using a slotted spoon, serve a heaping spoonful on a warm bun and load it up with your favorite toppings.

“Fried Rice”

Tonight I tried making Fried Rice with Cauliflower. It was ok. Cauliflower is a strong flavor, especially when cooked, but to save all those carbs and calories, I’d make it again!

“Fried Rice”

5 or 6 cauliflower flowerets

1 c. frozen peas and carrots

2 TB low sodium soy sauce

2 eggs

Pepper

Process cauliflower in food processor until it resembles the size of rice. Spray large skillet with cooking spray. Add cauliflower and peas and carrots. When heated, add soy sauce then make a well and add eggs.  Scramble eggs then fold into mixture. Add pepper.

Yield: 2 large servings.
