Yummy Fudge

So easy and so smooth and yummy!

Yummy Fudge

1/2 cup coconut oil 1/2 cup cocoa powder 1/2 cup smooth peanut butter 1/4 cup honey 1/2 teaspoon vanilla

Melt coconut oil.  Blend all ingredients together.  Pour into paper-lined mini muffin tin cups or silicon muffin cups and fill half-inch full.  Chill for 30 minutes or freeze for 10 minutes.  When firm, remove.  Store in a sealed container in the refrigerator.

Yield: 24. Per candy= 86 Calories; 8g Fat (71.8% calories from fat); 2g Protein; 5g Carbohydrate; 1g Dietary Fiber; 0mg Cholesterol; 26mg Sodium

Brussels Sprouts with Kick

But apparently he’s quite a cook too!

I keep telling people who say they don’t like Brussels sprouts they just haven’t had them right. Brussels sprouts need a little sweetening.  Then they are yummy!

Brussels Sprouts with Kick

1 lb Brussels sprouts

1 TB olive oil

2 TB Sriracha Chili sauce

4 TB honey

2 TB lime juice

Toss sprouts with olive oil and roast in 425* oven. Meanwhile, combine  Sriracha sauce, honey and lime juice. After sprouts are roasted toss them with honey mixture and serve.

Yield: 6 servings.
