Zucchini & Cheese Fritters

These didn’t hold together as well as I like. The original recipe didn’t call for letting the zucchini drain, but I suggest doing that first. I think mine was just too moist. Plus it was bland so I added Old Bay seasoning.

Zucchini & Cheese Fritters

3 medium zucchini, grated or shredded

1/3 c. panko

2 eggs

1/2 c. grated reduced fat cheddar cheese

1 tsp Old Bay Seasoning

Combine all ingredients in medium bowl. Spray large skillet with cooking spray. Place large spoonfuls into skillet and flatten into patty shape. Lightly brown on each side.

Yield: 16 fritters.  Per fritter= 28 Calories; 1g Fat (42.1% calories from fat); 2g Protein; 2g Carbohydrate; trace Dietary Fiber; 26mg Cholesterol; 122mg Sodium.

No Bake Pumpkin Cookies

Very Fall!  And I think it would be even better with butterscotch chips instead of white chocolate chips.

No Bake Pumpkin Cookies

1/2 c. sugar

1/4 c. butter

1 1/4 c. white chocolate chips

1/2 c. pumpkin

1 tsp cinnamon

1 tsp vanilla

4 c. old fashioned oats

 

In medium saucepan, combine sugar, butter, and chips until melted. Add pumpkin and cinnamon and combine well.  Remove from heat and add vanilla and oats.  Place by spoonful onto cookie sheets covered with wax paper.

Yield: 48 cookies. Per cookie=76 Calories; 3g Fat (36.3% calories from fat); 2g Protein; 10g Carbohydrate; 1g Dietary Fiber; 3mg Cholesterol; 18mg Sodium
