Zucchini Cakes

Zucchini Cakes
3 c. shredded zucchini
1/2 tsp salt
1 1/2 c. Panko
1 egg
3 TB sliced green onions
2 oz diced pimiento, drained
1 1/2 tsp Old Bay seasoning
1 tsp Dijon mustard
1 TB light mayo
1/8 tsp red pepper flakes

Place zucchini in a colander and sprinkle with salt. Let stand 30 minutes then press with a paper towel to remove as much liquid as possible. In medium bowl, combine zucchini, panko, egg, green onions, pimiento, Old Bay, mustard, mayo and pepper flakes.
Spray medium skillet with cooking spray. Form mixture into 8 patties and brown on each side.
Yield: 8 servings. Per serving= 63 Calories; 1g Fat (19.4% calories from fat); 3g Protein; 10g Carbohydrate; 1g Dietary Fiber; 24mg Cholesterol;
