I really like avocado and quinoa together.
1 c. rinsed quinoa
15 oz can fat free chicken broth
1 lime, juiced
5 TB chopped cilantro
6 grape tomatoes, quartered
Dash garlic powder
1/2 tsp onion powder
1 avocado, cubed
2 TB diced tamed jalapenos
In small saucepan, cook quinoa and chicken broth. Meanwhile, in medium bowl, combine remaining ingredients.
Yield: 4 servings. Per serving= 204 Calories; 8g Fat (32.6% calories from fat); 9g Protein; 29g Carbohydrate; 3g Dietary Fiber; 0mg Cholesterol; 188mg Sodium.
