Those green chilies may make your nose run. I also added a couple of tablespoons of diced tamed jalapenos, but you wouldn’t have to.
Southwest Chicken Pasta for 2
1 c. cooked chicken breast, diced
5 oz tomatoes w/ green chilies, undrained
7 oz black beans, rinsed & drained
3 oz Smart Taste rotini pasta, uncooked
1 c. water
2 wedges Laughing Cow Queso Chipotle cheese
Combine all ingredients in medium sauce pan. Bring to a boil then reduce heat, cover and simmer 10 minutes. Stir, turn stove off and let it sit until pasta is cooked.
Yield: 2 servings. Per serving= 481 Calories; 14g Fat (26.0% calories from fat); 42g Protein; 48g Carbohydrate; 11g Dietary Fiber; 94mg Cholesterol; 867mg Sodium

Pasta Jambalaya for 2
3 oz Smart Taste penne pasta
3 TB diced bell pepper
1/2 tsp Cajun seasoning
1/2 can black beans, rinsed and drained
5 oz canned tomatoes with green chilies
3 oz turkey smoked sausage, chopped
Cook pasta in boiling water. Meanwhile, spray small non-stick skillet with cooking spray. Add bell pepper and sauté 5 minutes. Add seasoning; sauté 1 minute. Add beans, tomatoes, and smoked sausage; bring to a boil. Reduce heat and simmer 10 minutes or until thick. Combine bean mixture with cooked pasta in large bowl.
Yield: 2 servings. Per serving= 289 Calories; 3g Fat (9.1% calories from fat); 18g Protein; 50g Carbohydrate; 11g Dietary Fiber; 19mg Cholesterol; 708mg Sodium.
This was a combination of two recipes. I ended up with a little too much strawberry though.
Flavor was good.
2/3 c. quick cooking oats
1/3 c. all-purpose flour
1/2 tsp baking powder
½ tsp baking soda
1 TB brown sugar
1/2 c. chopped fresh strawberries
1/4 c. unsweetened almond milk
Mix all ingredients. Place dough on cookie sheet sprayed with cooking spray and shape dough into 4 circles. Bake at 400° for 15 minutes.
Yield:4= 106 Calories; 1g Fat (9.8% calories from fat); 3g Protein; 21g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 229mg Sodium
I decided to see if I could make a smaller version of a recipe I’d seen at Pillsburyc.om. —And I can!
Buffalo Chicken Monkey Bread
7.5 oz buttermilk biscuits, cut into 4ths
1 c. diced roasted chicken breast
1/3 c. shredded reduced fat cheese
1/4 c. wing sauce
1 TB fat free blue cheese dressing
Dash celery seed
Preheat oven to 350°. Spray small oven-safe bowl with cooking spray and set aside. In a medium bowl, combine all of the ingredients and toss to coat pieces with wing sauce. Pour into prepared bowl and bake 30 minutes or until biscuits are cooked through in the middle and lightly browned.
Yield: 3 servings. Per serving= 310 Calories; 9g Fat (25.4% calories from fat); 22g Protein; 35g Carbohydrate; trace Dietary Fiber; 48mg Cholesterol; 1288mg Sodium.
